Award for Personal Licence Holders (APLH)

Under the Licensing Act 2003, anyone authorising the retail sale of alcohol will have to hold a personal licence. This qualification is needed if you apply for your Personal Licence and will advance your career prospects within the licensed retail sector in England and Wales.

Bread Making

Inspired by The Great British Bake Off? Want to learn some of these techniques to bake your own bread at home? Then this is the course for you! You'll learn to make fresh bread from scratch, including sour dough and various flavored breads. You will also learn a variety of fun bread making techniques, including moulding, proving and fillings. All the recipes you use on the course will be provided for your use at home.

Catering Skills Diploma

This is a practical programme, which helps you to develop skills in cooking. These skills will allow you to prepare a wide range of dishes. The Diploma gives you an excellent grounding in the hospitality and catering industry. You will gain a good standard of cookery skills and learn other workplace essentials such as hygiene, health and safety, teamwork and customer care. This course can lead to progression onto a Level 3 course.

Catering Skills Introductory Certificate

This is a practical programme, which helps you to develop skills in cooking. These skills will allow you to prepare a wide range of dishes. The Certificate gives you an excellent grounding in the hospitality and catering industry.

Catering – Food and Beverage Service Diploma

This is a practical programme which helps you to develop your knowledge and skills for various styles of food service, including plate, silver service and buffet. In addition you will learn other workplace essentials like hygiene, health & safety, teamwork and customer care.

Catering – Hospitality Supervision and Leadership

This is a practical programme which helps you to develop your knowledge and skills to supervise the service of food and drinks. The course covers the development of working relationships, control of resources, management of receipts, storage of goods, the development of wine lists and the handling of payments.

Catering – Professional Cookery Apprenticeship

An Apprenticeship in Professional Cookery will provide you with the skills and experience to work competently within the hospitality industry whilst working towards the industry standard qualification. As an apprentice, you will work under close supervision of an experienced employer. You will learn all aspects of the industry while maintaining effective working relationships with other trades and customers.

Chef – Junior Chefs' Academy

Chefs' Academy runs for 10 weeks. For nine weeks it is on a Wednesday evening. The last week is on a Saturday for a celebration lunch.

This is a unique course for students in Years 10 & 11 designed to attract and develop young talent into the hospitality and catering industry. There are lots of reasons to come to the Junior chef's Academy:

  • You'll be able to take home the food you make
  • You get to make delicious desserts as well as savoury dishes

  • Invite friends and family to a final week graduation

Chef – Professional Cookery VRQ Advanced Diploma

In order to apply for this course you need to have achieved a Level 2 VRQ Diploma in Professional Cookery.

This hands-on programme will equip you with the skills and knowledge to help you become a professional chef. It will open doors to various sectors of the food industry and provide you with many workplace essentials. Throughout this course you will gain high standard cookery skills in our state-of-the art facilities, alongside other fundamental knowledge in; hygiene, health & safety, teamwork and customer care.

ATTENDANCE PATTERN: 3½ days over 5 days
You will be expected to attend on at least three evenings per year

Chef – Professional Cookery VRQ Diploma

This hands-on programme will equip you with the skills and knowledge to help you become a professional chef. It will open doors to various sectors of the food industry and provide you with many workplace essentials. This is a certified course that is essential if you are considering working within the Hospitality and Catering Industry. Hospitality & Catering Services Apprenticeship

If you're keen to earn whilst you learn an apprenticeship is for you. An Apprenticeship in Hospitality and Catering Services will give you the skills and experience you'll need to work competently within the hospitality industry whilst working towards the industry standard qualification. You'll work under the close supervision of an experienced employer and you'll learn all aspects of the industry, while maintaining effective working relationships with other trades and customers.

Hospitality Events Management Diploma

This course provides a wide grounding in hospitality events management and offers progression onto a HND in Event Management or employment a job within the hospitality industry.

Hospitality Management Apprenticeship

The Higher Apprenticeship in Hospitality Management has been developed in consultation with leading industry employers to meet the needs of the hospitality industry. It  combines off-the-job training with on-the-job learning, coaching and self-managed study.

Hospitality Supervision Apprenticeship

An Apprenticeship in Hospitality Supervision will give you the skills and experience you'll need to work competently within the hospitality industry whilst working towards the industry standard qualification. Sausage Making
