This course is broken down into the following units:

  • Level 2 Food safety in catering (1 credit)
  • Level 1 Introduction to kitchen equipment (5 credits)
  • Level 1 Prepare and cook food by boiling, poaching and steaming (10 credits)
  • Level 1 Prepare and cook food by stewing and braising (7 credits)
  • Level 1 Prepare and cook food by baking, roasting and grilling (12 credits)
  • Level 1 Prepare and cook food by deep frying and shallow frying (5 credits)

Short answer test, practical exams, written questions.
